Catching Up

With all the weekend shenanigans I got behind on my posts.  Today I’m catching up.  I don’t like being behind at all.  I get confused.

 

Sunday:

I managed to get in bed about 2:30AM.  Still riding the high of a fabulous show.  It was so much fun.  Today is clean-up, a workshop given by our headliner, Diego Wolf, grocery shopping and laundry.  Can I say if you ever get the chance to see the man perform, run to the nearest ticket booth.  He sets the stage on fire!

Breakfast: bacon and coffee.   Just not that hungry after a 1AM dinner

Lunch: Wendy’s double w/lettuce bun, double tomato and mustard

Snack: Sauteed garlic shrimp, peach, 1/2 larabar

^^Not all at once. This was scattered throughout the afternoon.

Dinner:

3 slices of jicama, whole30 compliant taco seasoned meat, salsa, quac.

First time trying jicama. It has a nice bland flavor and a texture between a tart apple and a potato.  It’s great as a dip for Baba Ganouj as I found out on Tuesday.

 

 

Monday:

Back to the grind.

Breakfast: half Larabar, coffee

Lunch: curry chicken (finally eating the last of it!) cucumber, mayo

Snack: Trader Joe’s apple coconut bar (I think I can probably make these!)

Dinner: I don’t remember.  See what happens when I get behind.  I know I went home from work and made some ground pork meatballs.  I ate a couple of those.  They have ground pork (duh), shredded yellow zucchini, green onion, jalapeño, salt/pepper, coconut aminos, smashed pork rinds as a binder, not enough cayenne pepper.  They’re still tasty, just a little on the bland side.

I can’t believe I can’t remember what I had.  I know whatever it was it was definitely Whole30 compliant.  11 days in and I’m not blowing this.
