Breakfast: coffee and coconut milk

Lunch: grilled chicken breast chopped with homemade mayo, spaghetti squash with butter,


Drive time appetizer: Raw nuts

Dinner: Gordon’s Simply Bake salmon, more spaghetti squash with butter, tomato with mayo.


I’m the only one in the house that eats veggies so when I cook them I have to eat them until they are gone. I probably have two more servings of spaghetti squash to finish. I love fresh tomato with mayo. It’s as close as I can get to a tomato sandwich.

The Gordon’s salmon isn’t ideal. There’s corn starch and maltodextrin, both if which I need to leave alone. But I’ve these in the freezer for a while and needed to cook them before they go bad. I throw out too much food now and feel so guilty because if it.
