Whole30 The Weekend Edition Days 27 & 28

I wish I could say the weekend was super fabulous marvelous but really it was just a typical weekend: full of chores and things to do and not much excitement.

I set out Saturday running errands. I returned some items to the stores. That pair of size 18 jeans that I found hidden under a bunch of blankets that I pulled on without unzipping… Gone!  I didn’t have a receipt but got the full price back any way! Win!

I stopped by the optometrist and made a couple of appointments to get the eyeballs checked out.

Met my husband at a health fair so he could get an Angioscreen. If you’ve never heard of angioscreens they are pretty dang awesome.  Especially if you have a family history of heart disease or stroke.  I had 4 techs working on me at once plus a transcriptionist.

They hooked up EKG leads and blood pressure cuffs on each arm and each leg.  An Ultrasound tech performed a limited doppler ultrasound of both carotid arteries and the abdominal aorta.  It takes about 15 minutes and when you are done you get a report like this.  Of course they also give you your BMI which I think is a bunch of mathematical poppycock.  BMI was never intended to be used on individuals but on population groups.

After the health fair we went to Chili’s.  I wasn’t sure if there was anything I could eat but I figured it would be my challenge of the day.  They have a combo of grilled steak/grilled shrimp with steamed broccoli and loaded mashed potatoes.  Coach split the meal with me.  He got the steak, at the cheese & bacon off the mashed potatoes and an order of sweet potato fries.  I had the shrimp and broccoli and unsweetened tea.  WIN!

Here’s a little food porn for you.  Coach made his delicious cinnamon pork chops.  He sauteed all my food in ghee, his in butter.  The onions and carrots get cooked first. Then brown the porkchops in the grease of your choice.  Add the veggies back into the pan, sprinkle cinnamon on everything and let it simmer for a bout 10 minutes.  Just freaking delicious!

Ooooh those pork chops look/sound wonderful!

They are and seem super easy to make.
