Going Bananas

Do you ever have near rotten bananas and wonder what to do with them?

Banana bread?  Nope, can’t do that.  No bread.

Pudding?  No, too much sugar.

Fried?  Why not? I don’t fry a lot and I have a fresh tub of coconut oil.

So I found some unsweetened coconut flakes and golden flax meal.

I mixed it together in the blender until it was chopped fine.

Then I took and egg and whipped it.  I whipped it good.

I cut each banana into 2 or 3 chunks.  Rolled it around in the egg and then rolled it around in the coconut/flax mix and…

Dropped it in the hot coconut oil.

From this:

Onto this:

to drain some of that oil.

Drizzle with some honey…

and enjoy.

Now I need someone to tell me… is it Paleo?  I know it’s not Whole30 with the honey all over it.
