Sweet Asparagus

Since beginning this journey to fitness I have tried many new and interesting recipes.  I love a lot of food (one of the reasons I need to get fit) but I don’t cook a lot.

Since January I have roasted brussel sprouts, made eggplant chips, roasted beets, steamed an artichoke and now I’ve cooked asparagus.  I’ve eaten asparagus before I just never cooked it before.

I found the recipe on Food.com.

Ingredients:

2-3 T butter or margarine

2 T brown sugar

1C chicken broth (I use low sodium, 99% fat free)

Fresh asparagus

(I did not use the orange zest recommended in the recipe)

1 In a skillet over medium-high heat, melt butter and brown sugar until sugar is dissolved.

2 Add asparagus; saute for 2 minutes.

3 Stir in chicken broth; bring to a boil.

4 Reduce heat; cover and simmer for 8-10 minutes or until asparagus is crisp-tender.

5 Remove asparagus to a serving dish and keep warm.

6 Cook sauce, uncovered, until reduced by half.

7 Pour sauce over warmed asparagus and serve immediately.

For step 4 I cooked the asparagus for only 5 minutes and it was too long. It’s not crunchy anymore and the Coach called it slimy but he doesn’t like green veggies anyway. It makes a LOT of sauce so next time I make it I’m going to cut that part in half.

I’ll be having this tonight with Chicken fajita mix that the Coach is cooking.

Sounds good! I never would have thought of using sugar when cooking asparagus! We like to make it with a little olive oil or butter (usually no more than about 1 T if that) and saute it in a skillet or grill pan. Then we just add a bit of salt and pepper and a squeeze of lemon (or toasted sesame seeds). It’s easier to keep it crunchy that way and even the sweetie likes it – he wasn’t a huge “green things” fan when we first met either.
