Recipe: Crockpot Chicken Chow

This is a totally made up off the cuff kind of recipe.  I needed something simple last week and then realized how fabulous this could be.

The basic chicken chow:

1. Chicken breast pieces: whole or cut, it doesn’t matter. I’m using frozen chicken breast tenderloins because they fit easier into my crockpot

2.  1 can Cream of Chicken or Cream of Mushroom soup. Use the lowfat/fat-free variety. You don’t lose any flavor at all.

Then you can add to that whatever you want.  Onions, potatoes, carrots, peas, black beans, mushrooms. Add any seasoning. Salt, pepper, cayenne, curry, paprika, whatever suits your fancy.

Serve over brown rice or noodles.

I’m making this for the family tonight and have added French’s fried onions (just a few) and mushrooms. I’ll be serving it over Barilla Plus pasta with steamed veggies on the side. I’ll try to get a pic for you later.
